Leftover Turkey stew

Tastes best when served with bread, appam (fermented rice based crepes), idiyappam, rotis, nan
Ingredients
  • 3½ cups of Turkey (diced or shredded)
  • 1 cup of turkey broth or chicken broth
  • 1 large onion (sliced)
  • ½ inch ginger (chopped)
  • 3 cloves of garlic (chopped)
  • 2 green chilies
  • ½ teaspoon of Pepper (may be reduced to your spice requirement)
  • 2½ cups of potatoes (diced)
  • 1½ cups of carrot (diced)
  • 2 springs of curry leaves (See notes*)
  • 1½ cups of hot water
  • Spices:
  • 1 stick of cinnamon
  • 1 teaspoon of cloves
  • 2 star anise
  • 1 teaspoon of cardamom
  • 2 tablespoon of oil
  • Salt – as required
  • 13.5 fl oz/ 400 ml / about 2 cups of thick Coconut milk
Method
  1. In a large skillet, pour oil on medium flame. Add chopped ginger, garlic, green chilies and curry leaves.
  2. When it turns golden brown, add sliced onions, spices- cinnamon, cloves, star anise, cardamom and sauté for some time. When oil starts caramelizing, add potatoes and carrots.
  3. Add 1½ cups of hot water and close it with the lid. Cook until carrots and potatoes are tender.
  4. Now add turkey cubes and broth. Add pepper and salt.
  5. Close the lid and let it cook for 10 minutes.
  6. Check for salt.
  7. Reduce heat to low and add coconut milk. Give a good stir and combine everything well. Let it cook for 5 minutes at very low heat.
  8. Take off from heat. Serve hot or warm.

Notes
Curry leaves adds flavor to the recipe. But its okay if you don't have curry leaves in your shelf
