Pomegranate spinach salad is the one that happened naturally in my kitchen. We had some pomegranate seeds, left over spinach leaves. We consumed lot of calories for thanksgiving. In order to compensate that, I chose to make some salad with pomegranate. There are many pomegranate salad recipes. But the one with spinach, walnut and goat cheese combination was the best fit for me. Earlier I made pasta salad with cream cheese dressing and corn zucchini salad. If you love a yogurt dip, here you have pomegranate raita. If you love to have some roasted veggies in salad, roasted grape tomato and baby potato salad will serve the purpose.
Pomegranate seeds are very good in anti aging. Walnut and spinach are rich antioxidants. Totally a health packed combo for you. Love to try some healthy raw vegan desserts…? Then go for raw vegan nectarine parfaits and kiwi pudding.

- 4 cups of packed spinach leaves
- Seeds from half the portion of a large pomegranate
- 4 tablespoons of goat cheese
- 4 tablespoons of walnut
- A generous pinch of Salt
- A pinch of pepper
- 1 tablespoon of extra virgin olive oil
- In a small bowl, mix olive oil, salt and pepper. This is the dressing.
- In a large bowl, mix spinach leaves, pomegranate seeds, goat cheese and walnut.
- Pour dressing over it and serve.
