Two ingredient raw vegan persimmon pudding is one easy persimmon pudding recipe. Persimmon pulp gives the flavor of the fruit and thickening agent is coconut cream. I made with very ripe persimmons. So, no need to add an extra sweetener. I was hunting for the recipes for persimmon pudding. For this post, I wanted it to be simple, less ingredient persimmon recipe. Even though this is a raw persimmon recipe, there is no compromise in taste.

- 2 ripe persimmons
- 1 cup of chilled coconut cream (See Note 1)
- 1 tablespoon of chopped walnuts
- Remove skin and seeds of persimmons. Cut them into cubes.
- Blitz both ingredients in a blender.
- Pour into dessert cups or glasses and chill in a refrigerator overnight.
